The unique shape is obtained by rubbing a piece of dough in your hands until you get an elongated and twisted shape with thin ends, and are traditoinally served with basil pesto. Trofie are traditionally paired with Genoese pesto resulting in the most well-known dish of Ligurian cuisine.
