Whole Brown (Crimson Type) Crimson whole red Lentils (Lens Esculenta) are shelled, orange cotyledon colored lentils. They are high in protein like any legume, bean or lentil. Crimson Lentils also cook much faster than other lentils. Cook rinsed lentils in broth or water using about 3 cups of liquid per every cup of lentil beans.
Bring to a boil, cover the pan, and let simmer until they are tender. Add salt at the very end.
